It’s just not Christmas without a tree! The baking elves have been rolling out doughs and decking the boughs of our bakeries with cookie decorations and trees from our buddies at Pines and Needles.
Christmas Tree time!
A British brand with Scottish heritage, you can always spot the Pines and Needles tree delivery team coming from the telltale kilts.
Since 1995, this merry kilted crew of tree experts have been supplying beautiful Christmas trees to London and the south of England.
They kindly gave us two big trees to bring a festive feel to our Spitalfields and Richmond bakeries, as well as providing Christmas wreaths for all the bakeries.
Their mini trees were the perfect decoration for our cosier bakeries in Soho, Islington, South Kensington and Notting Hill.

Christmas Cookie Decorations
Our bakers got to work making beautiful cookie decorations, taking the Linzer Cookie recipe from our Home Sweet Home cookbook.
These buttery, melt-in-the-mouth cookies are made with cinnamon and ground almonds and are traditionally heart-shaped and sandwiched together with strawberry jam.
To give them a festive twist we rolled out the dough, shaped the cookies with Christmas cookie cutters, cut holes into the dough before baking to hang them with ribbons on our trees and used piped coloured icing to decorate once completely cool.
If you’re making these at home, we recommend baking an extra batch to eat, as they really are very pinchable.
You can use any Christmas cookie cutters you have. If your Christmas cookie cutters are much bigger or smaller in dimension than the 8cm/3in x 3cm/2in heart cutter we suggest using in the Linzer Cookie recipe, be sure to adjust the cooking time accordingly. Larger cookies will need a few minutes longer and smaller cookies will need less time. When they are golden, they are done.
